Echinacea Popsicles – Courtesy of The Cooking Channel
We’ve been watching Grow Your Own Drugs on The Cooking Channel and have been really impressed with how many uses James Wong finds for honey. As Mr. Wong said on Saturday, Echinacea probably is the most recognized herbal remedy. In this recipe, he uses Echinacea roots to make popsicles to use when you have a cold or an infection.
Ingredients
- TINCTURE:
- 2/3 ounce fresh echinacea root, chopped
- 1/3 cup Vodka
- POPSICLES:
- 3 1/3 cups cranberry juice
- 1 cup honey
- 3 1/8 inches ginger root, peeled and thinly sliced
- 2 medium red chiles, sliced
- 1 sachet gelatin (animal sourced)
- Juice of 2 large lemons
Instructions
- Put the echinacea in a jar and pour over the vodka to cover completely. Let infuse for 2 to 4 weeks. Strain the tincture of pieces of echinacea root.
- Combine the cranberry juice, honey, ginger, chiles and gelatin in a saucepan. Stir together and then simmer for 5 minutes. Take off the heat and let cool. Strain through a sieve into a bowl.
- When cooled, stir in the lemon juice and echinacea tincture. Pour into popsicle molds and freeze.
Notes
Take during colds or infection. The popcicles keep in the freezer for up to 3 months.
