Brunch at Bobby’s –
Mustard Greens with Honey
One of the ways I relax is to watch cooking shows. One of my favorites is Brunch at Bobby’s on the Cooking Channel. I never thought of adding honey to mustard greens to balance flavors. Since this was such a good idea, I am adding a riff on Bobby’s recipe for Mustard Greens with Honey.
Are Mustard Greens Healthy?
Are you looking for a nutrient dense food, high in fiber, and delicious in flavor? Look no further than mustard greens. Here is a post from Nutrition and You which talks extensively about the health benefits of mustard greens.
The Recipe
Ingredients
- 2 tablespoons unsalted organic butter
- 2 tablespoons bacon drippings (We use nitrate free bacon.)
- Pinch red pepper flakes
- 1 clove garlic, thinly sliced
- 1 pound mustard greens, washed and torn
- Bee Wild Raw Honey
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Add butter and bacon drippings to a medium hot cast iron skillet
- Saute the garlic and red pepper flakes until the garlic is soft.
- Add mustard greens a handful at a time, stirring them into the butter and bacon drippings.
- When all the greens are in the skillet, add 1/8 cup of water.
- Steam until the greens are soft.
- Drizzle raw, wild-crafted honey, to taste, on the greens. The honey will offset the sharp taste of the mustard greens.
