Korean Roasted Pork Belly
I’ve been watching Korean Made Simple on the Cooking Channel and have marveled at how much honey is used in Korean cooking. When they made Roasted Pork Belly today and used honey in the glaze, I knew I just had to share a recipe for Korean Roasted Pork Belly with you. I’ve Anglicized the recipe as much as I can, but all ingredients are Korean-Style. Please know that you can buy the unusual ingredients at Whole Food Grocery or an Asian market. By the way, our gallberry honey would stand up well in this recipe!

The Recipe

- 3+ pound piece of pork belly with skin on
- COOKING LIQUID:
- 8 cloves of crushed garlic
- 7 roughly chopped spring onions or scallions, with roots on
- 1 large hand of ginger, skin on, roughly sliced (about half a hand size)
- 1 onion, peeled and cut into eighths
- 2 tablespoons soy bean paste
- PICKLED RADISH::
- 6 ounces white daikon radish cut into long strips
- 4 1/2 teaspoons apple cider vinegar or rice wine vinegar
- 1 1/2 tablespoons white granulated sugar
- 1 1/2 teaspoons chili flakes, season to taste
- 1 small clove garlic, grated
- 1 teaspoon salt, or to taste
- RUB:
- 2 tablespoons soy bean paste
- 2 tablespoons honey
- 1 1/2 tablespoons grated ginger
- 1 teaspoon Korean chili paste
- FINISHING SAUCE:
- 2 tablespoons Korean soybean paste
- 2 teaspoons grated onion
- 2 teaspoons roasted sesame oil
- 2 teaspoons roasted sesame seeds
- 1 teaspoon grated ginger
Instructions
- Place the pork belly in a stock pot.
- Cover with water leaving room in the stock pot for the "cooking liquid" vegetables.
- Add the "cooking liquid" ingredients.
- Bring to the boil and cover the stockpot, turn down the the heat so that the pork belly simmers.
- Cook for at least 2-3 hours, until the pork belly is completely cooked.
- Remove the pork belly from the cooking liquid and cool.
- In the meantime, combine all the ingredients for the pickled radish condiment.
- Put the radish salad in a covered bowl and chill in the refrigerator.
- Once the pork belly is cooled, remove the skin and lightly score the fat in a diamond pattern.
- Preheat the oven to 350 degrees Fahrenheit.
- Put the pork belly in a roasting pan.
- Combine the ingredients for the rub and rub on the top and sides of the pork belly.
- Bake until the rub becomes a slightly charred glaze.
- In the meantime, make the finishing sauce.
- Serve the pork belly sliced with the finishing sauce.
- Notes
- The pork slices can be used to build sandwiches with lettuce, pickled radishes, cilantro on buns or flat bread. If you do not want to use bread, you can always make lettuce sandwiches with the pork and condiments.
