You can also try this recipe with gluten free flour and coconut sugar, although some chefs find issues combining coconut sugar and lemon juice.
What’s a Healthy Oil?
QueenBee: I’m really into researching and reading with a critical eye. I don’t necessarily believe everything I read. I like this post on healthy oils from WebMD with a NOTABLE EXCEPTION that you may want to research for yourself. I do not use canola oil at all and pretty much have eliminated it from my food plan. Canola Oil is made from rape seed, the same source that Agent Orange was derived from. Having friends and family members who suffered from the effects of Agent Orange, I have a strict “no eating food products derived from rape seed policy.” Therefore, I personally would eliminate canola oil from my list of healthy oils. In any event, I much prefer the taste of Olive Oil and Walnut Oil and prefer peanut oil for stir frying.
The Recipe
Ingredients
- 1 cup organic yellow cornmeal
- 1 cup organic all-purpose flour
- 1/3 cup organic granulated sugar
- 1 tablespoon baking powder
- 2 teaspoons organic lemon zest
- 1 teaspoon salt
- 1 cup organic whole milk
- 2 large organic eggs, plus 1 yolk
- 1/4 cup Bee Wild Gallberry or Orange Blossom honey
- 1/4 cup organic extra-virgin olive oil
Instructions
- Preheat the oven to 375 degrees F.
- Prepare silicon muffin pan or individual muffin cups with a slight spraying of organic flavorless oil spray.
- Mix cornmeal, flour, sugar, baking powder, lemon zest and salt in a large bowl.
- In another bowl, whisk together the wet ingredient (the rest of the ingredients).
- Add the wet ingredients to the dry ingredients one third at a time. Mix until the batter is smooth. Do not over mix.
- Fill each muffin cup or muffin pan 2/3 full of the batter.
- Bake until golden brown and slightly crusty on the outside. This usually takes 18-20 minutes.
- Let the muffins cool at least 15 minutes. Then, you can peal the silicon muffin cups or pan right away from the muffins without sticking.
