Healthy, Gluten Free Thanksgiving Breakfast:
Paleo Pumpkin Muffins
As you continue your journey into improving wellness, you may find you have a sensitivity to gluten, a protein composite found in wheat, barley, and some other grains. Many have found relief from the bloating and gas created by gluten sensitivity by giving up gluten-rich grains. If you are like me, you’ll find that it’s hard to find baked goods that have that lovely, elastic texture that gluten gives them. So, when you find a recipe for paleo-tested baked breads and muffins, it’s good to pay attention.
This is why we are including this recipe, courtesy of Civilized Caveman Cooking, for Paleo Pumpkin Muffins. These muffins with some luscious organic fruit salad will make an exquisite Thanksgiving Breakfast.
What Is a Paleo Diet Anyway?
Our earliest ancestors were hunter/gatherers. Generally, the men hunted and the women gathered. This simply is what the Paleo Diet is about — proponents advocate for a hunter/gatherer nutritional program. In other words, you only eat what early man could have hunted or gathered.
So, what does that mean in practical terms? Here’s a great article that simplifies and summarizes how you can start eating Paleo.
The Recipe
Ingredients
- 1/2 cup organic pumpkin puree
- 4 organic eggs
- 1/2 cup almond butter
- 3-4 Tbsp. raw honey
- 3 Tbsp. melted organic coconut oil or grass-fed butter/ghee
- 1 tsp vanilla extract
- 1/2 cup coconut flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1.5 tsp. cinnamon
- 3/4 tsp. cardamom
- 3/4 tsp. ground or freshly grated ginger
- 1/2 tsp. unrefined salt
Instructions
- Combine pumpkin, eggs, almond butter, sweetener, butter/oil, and vanilla in bowl, mixer, or food processor until well-mixed.
- Add in remaining ingredients, mix well, and let sit for 5 minutes. This will allow coconut flour to thicken substantially and absorb moisture.
- Meanwhile, grease muffin tin with butter or coconut oil.
- Fill cups evenly.
- Bake for 25-35 minutes, testing with toothpick, so that they are perfectly baked.
- Let cool for a few minutes before carefully removing — otherwise they are too delicate. Serve with grass-fed butter and/or jam, and try not to eat them all in one sitting. Enjoy!
