Passover Green Salad
Bitter herbs and salt and vinegar are traditional Passover foods. I was looking around for Passover recipes to share with you, and I found this recipe for Passover Green Salad at Epicurious. This salad uses traditional ingredients with a modern flair, updating the salad into a dish that everyone will love. For example Romaine lettuce with basil and dill represents the bitter herbs, a vinaigrette brings in the salt and vinegar. and nutriasparagus and avocado replace the green vegetables usually used.
Green Salad Is Healthy
There are at least four healthy reasons to eat green salad, according to Web M.D. The vitamins, minerals, fiber, and water in green veggies pack a lot of nutritional punch. With a simple vinaigrette, a green salad can be a main course with some protein or a healthy side dish.
The Recipe

Ingredients
- Vinaigrette:
- 2 tablespoons finely chopped organic shallot
- 2 tablespoons red wine vinegar
- 1/2 teaspoon finely grated organic lemon zest, plus 1 tablespoon fresh organic lemon juice
- 1 tablespoon fresh organic orange juice
- 2 teaspoons Bee Wild raw honey (We suggest our Wildflower or Citrus Honey.)
- 1/3 cup organic extra-virgin olive oil
- Kosher salt and freshly ground organic black pepper, to taste
- Green Salad (We suggest you use all organic vegetables.):
- Kosher salt in several quarts of pure water, for blanching the asparagus
- 2 bunches organic asparagus, ends trimmed and cut on a diagonal into 1-inch pieces, blanched for 1 1/2-2 minutes in boiling salted water, cooled in ice water, and then put on paper towels to dry
- 1 organic romaine heart, roughly chopped
- 1 organic English hothouse cucumber, trimmed, seeded, halved lengthwise, and thinly sliced
- 1 organic ripe avocado, cut into 1/2-inch cubes
- 15 organic basil leaves, torn
- 1/3 cup organic torn fresh dill fronds
- Freshly ground black pepper, to taste
Instructions
- Vinaigrette:
- Whisk all vinaigrette ingredients together except the oil.
- Slowly add the oil and then adjust seasonings.
- Salad:
- Mix salad ingredients together gently so that the pieces retain their shape.
- Add salad dressing and gently toss. You will have leftover salad dressing which you can serve on the side.
- Adjust salt and garnish with freshly ground black pepper.
