QueenBee’s Cleanup of Thai Cucumber Salad
@atlhoneyboy John Wright took us out to dinner to celebrate QueenBee’s birthday. Of course, we went to Siam Square in Smyrna, since it’s a real food restaurant and one of our favorites. One of the dishes we all enjoyed was Chicken Satai, and QueenBee’s favorite condiment with Satai is the salty/sweet/sour cucumber salad they serve with this dish. Since we are continually eliminating white sugar from our diet, she decided to clean up the usual cucumber salad recipe and use our Wildflower Honey instead of white sugar.
Are Cucumbers Healthy?

The Recipe
Ingredients
- 3 large cucumbers, chopped into half inch pieces
- 1 small onion, chopped finely
- 2 jalapeno peppers, seeded and chopped finely
- 1/4 cup cilantro, chopped coarsely
- 1 tbsp. Himalayan or good quality sea salt
- 2 tsp Bee Wild Wildflower Honey (to taste)
- 1/4 cup rice wine vinegar
- 1/2 cup chopped peanuts
Instructions
- Sprinkle the salt over the cucumbers, toss, and put in a colander. Let drain over the sink for 30 minutes.
- Pat the cucumbers dry.
- Put the honey and rice wine vinegar in a jar with a lid and shake vigorously.
- Carefully toss the cucumbers, jalapenos, and cilantro in a bowl with the salad dressing.
- Let marinade in the fridge until cool.
- Garnish with chopped peanuts.
