For Your Tray of Togetherness:
Cardamon Citrus Fruit Salad
All over the world Chinese people are celebrating the Lunar New Year. One of their traditions is to offer guest a Tray of Togetherness. The Tray has eight compartments and is often octagon-shaped. One often sees oranges or tangerines in one of the compartments of the tray. These fruits symbolize abundance and plenty. So, this year we are going to share a recipe for Cardamon Citrus Fruit Salad which is sweetened with honey. We recommend our Orange Blossom Honey because it won’t compete with the flavor of the citrus fruit.
What about Grapefruit?
I remember being on the grapefruit diet as a young adult. I was so convinced that the extra 30 lbs I was carrying would melt off without me changing anything else. The Recipe
Ingredients
- 1 large ruby pink grapefruit
- 3 navel oranges or a combination of naval oranges, blood oranges, mandarin oranges and/or tangerines
- 1/4 cup Bee Wild Orange Blossom honey
- 2 Tbsp fresh lime or lemon juice
- 1/4 teaspoon ground cardamon
Instructions
- Peel and segment the fruit, putting the segments in a strainer over a bowl.
- Put the citrus fruit juice in the bottom of the bowl, the lime juice, and the honey in a saucepan.
- Bring to a boil and turn the pan down to low.
- Simmer for 10 minutes.
- Cool the cardamon citrus honey dressing.
- When cool, pour the dressing over the fruit and marinate in the refrigerator.
- Serve chilled.
