Chocolate with Honey
I have a friend who is a Chocolate Yogi and makes the most exquisite healthy chocolates. If you haven’t had real chocolate with organic ingredients, then you have missed a deep, rich taste experience, filled with anti-oxidants. So, when I was researching for a Valentines Day Chocolate with Honey recipe, I was thrilled to find http://wellnessmama.com. What impressed me the most is this recipe uses honey instead of sugar as a sweetener, so I used the recipe as a basis for this post. A definite win!

The Recipe
Valentine’s Day Chocolate with Honey
Ingredients
- 1 cup of Cocoa Butter
- 1 cup of Organic Dutch Process Cocoa Powder
- ½ cup Bee Wild Raw Honey (We play around with our honeys depending on what else we are flavoring the chocolate with.)
- 1 teaspoon of Real Vanilla Extract or other flavors to taste
- Optional: Toasted chopped almonds, orange or mint extract, etc.
- Our favorite Chocolate has:
- Bee Wild Orange Blossom Honey
- Orange Extract instead of Vanilla
- Dried Cranberries
- Chopped Walnuts
Instructions
- Line an oblong cake pan (the kind with a 1/2-1" lip around it) with parchment paper.
- Get out your double boiler.
- If you don't have a double boiler, you can use a glass or stainless steel bowl that fits over a pan of hot water.
- Put an inch or so of water in the double boiler on medium heat.
- From this point on, make sure that NO WATER gets into the chocolate or it will seize up.
- Melt the cocoa butter in the double boiler, stirring so that the cocoa butter doesn't burn.
- When the cocoa butter is melted, take it off the heat and add the cocoa powder, honey, and any extracts.
- Stir until smooth.
- Pour the chocolate into the pan and spread it evenly using a spatula.
- Sprinkle any nuts or fruit on the top of the chocolate immediately.
- Let the chocolate harden.
- Your chocolate can be stored in the fridge for a week, if it lasts that long.
