Would You Believe It?
Grain, Dairy, Gluten, and
Refined Sugar Free Cinnamon Rolls!!!
I was thrilled to find a recipe for healthy cinnamon rolls. When we get a chance to go to Whole Foods, I’m going to get the ingredients and give my riff on this recipe a try. If the cinnamon rolls are as good as they look, I’ll be baking them often!
The Health Scoop on Cinnamon and Honey
I wrote a companion post to this recipe about honey and cinnamon tea for weight loss. Since that time, I’ve found a lot of support for drinking this tea including spending five days on the Digestive Burn, where cinnamon was a major component of Haylie Pomroy‘s Digestive Burn Tea. Additionally, we served Cinnamon Weight Loss Tea to our booth visitors during our holiday shopping events. It was a big hit, and people did remark that they felt less bloated and more energized after drinking the tea. Click here for my companion post.
The Recipe for Healthy Cinnamon Rolls
Ingredients
- 2 Cups Almond Flour
- 1/8 Tsp Sea Salt
- 1/2 Tbsp Baking Soda
- 1 Tbsp Baking Powder
- 2 Tbsp Unsweetened Applesauce
- 1 Tbsp Unsweetened Coconut Milk
- 1 Tbsp Bee Wild Orange Blossom Honey (In Dough) 1/4 Cup Bee Wild Orange Blossom Honey (In Filling)
- 1 Tsp Cinnamon (In Dough) 2 Tbsp Cinnamon (In Filling)
- 2 Eggs
- 4 Tbsp Ground Flax Seed
- Icing:
- 1 Scoop (2 tbsp) vanilla protein powder.
- 1 tbsp honey
- 1/4 cup unsweetened coconut milk.
Instructions
- Mix together dry ingredients, including cinnamon for in the dough.
- Combine eggs and coconut milk.
- Then, add applesauce to wet ingredients.
- Add honey to the wet ingredients.
- Make a well in the dry ingredients. Beat in 1/3 of the wet ingredients into the dry ingredients. Continue to add wet ingredients into the dry ingredients.
- Form a dough ball, cover, and let rest in the refrigerator for about 30 minutes.
- Preheat oven to 350 degrees F.
- Lay a piece of parchment paper on your counter. Oil it with coconut oil.
- Press dough flat on the parchment paper, making a large round. Use our judgment about the desired thickness of the dough. The dough will not be thin - you are not using a rolling pin.
- Cut the dough in 5 strips, drizzle the strips with honey, and sprinkle with cinnamon.
- Roll the strips into cinnamon rolls, pinching the rolls so that it sticks together. You will find that the dough is sticky.
- Place the cinnamon rolls in a baking dish, either large size (five rolls) or cut in half for mini-deep rolls (10 rolls).
- Bake for 25-30 minutes, until they are brown.
- Mix ingredients for icing until they are smooth and runny enough to drizzle on the rolls.
- Drizzle icing on cinnamon rolls.
- Serve warm.
