I love breakfast. Anyone who visits my house knows that breakfast is going to be a treat. When I find a recipe that incorporates two of my favorite ingredients – Orange Blossom Honey and Cheddar Cheese — I start having visions of Honey Cheddar Biscuits with orange marmalade and country ham on the side. This salty-sweet flavor profile hits all the right taste buds for me. With a cup of organic coffee to add a little bitter to the mix, a perfect breakfast for QueenBee!

Ingredients
- 3 1/2 cup(s) flour
- 2 tablespoon(s) baking powder
- 1/2 teaspoon(s) salt
- 6 tablespoon(s) cold butter, cut into small pieces
- 1 cup(s) shredded cheddar cheese
- 1/2 cup(s) shredded cheddar cheese
- 1/3 cup(s) thinly sliced scallions
- 1 cup(s) half-and-half
- 1/3 cup(s) orange blossom honey
- 2 tablespoon(s) orange blossom honey
- 2 large eggs, beaten
Instructions
- Heat oven to 400 degrees F.
- Spray 2 baking sheets with nonstick spray.
- In a bowl, stir flour, baking powder, and salt until blended.
- Cut in butter until mixture resembles coarse crumbs.
- Add 1 cup of the cheese and scallions; toss to blend.
- In a bowl, whisk half-and-half, 1/3 cup of the honey, and eggs until thoroughly blended.
- Slowly pour over dry ingredients; stir until evenly moistened.
- Gather sticky dough together; turn out onto a well-floured board.
- With floured hands, pat 12 even portions of dough into 2 1/2-inch-wide discs.
- Place 6 discs 1 to 2 inches apart on each baking sheet.
- Heat remaining honey on low heat, stirring constantly, until it becomes syrup-like.
- Brush honey over tops of scones; sprinkle each with the remaining 1/2 cup cheese.
- Bake 20 to 25 minutes, or until dark golden brown.
- Cool on baking sheet 10 minutes.
Notes
I'm toying with adding bacon crumbles and chives to the dough instead of scallions the next time I make these biscuits. Let me know what other combinations you try by adding a comment to this recipe.
