When one of our recipe readers on Skype sent us this “healthy” recipe, and its ingredients were honey, chocolate, and bacon, we had to smile. This recipe actually is gluten free. Chocolate Might Be Healthy? Who Knew?
Chocolate always has gotten bad a wrap. After all, most people eat milk chocolate which is loaded with sugar, milk, and other fat-promoting ingredients. But, is all chocolate bad for you? Current thought is that if you eat a reasonable amount of dark chocolate with 70% cocoa or greater, chocolate is a superfood. Here is a great post from Best Health that talks about the health benefits of chocolate.
The Recipe
Honey Infused Chocolate Covered Bacon
Ingredients
- 1/2 lb cooked natural/organic nitrate free, thick cut bacon
- 1/4 cup of Gluten/Dairy Free raw cacao powder
- 1 tbsp organic coconut oil
- 2 tbsp Bee Wild raw honey
Instructions
- Preheat oven to 400 degrees F
- Place strips of bacon in a single layer on a foil covered baking sheet with a lip
- Cook bacon in the oven until deep golden brown, about 15-20 minutes
- When the bacon is finished, transfer it to a paper towel lined tray and cool.
- Combine the honey and coconut oil in a stainless steel saucepan.
- Bring to a soft boil and continue to boil for about 30-45 seconds until you get a nice frothy caramel-like mixture.
- Cool the caramel until it is just warm. This takes about 5 minutes.
- Mix the cocoa into the caramel a little at a time, until you get a spreadable paste.
- Break the bacon pieces in half.
- Spoon some of the chocolate caramel on one side of the bacon and spread it halfway up the bacon.
- Cover and chill in the frig until the chocolate is set.
