A Honey of a Spring Salad:
Greens with Strawberries and
Honey Watermelon Dressing
Spring is nearly here, and soon organic spring greens and strawberries will be in season. This luscious recipe for Spring Salad, filled with greens, strawberries, almonds, and Honey Watermelon Dressing is sure to please and cleanse your palate from heavy winter foods. We suggest using Bee Wild’s Wildflower Honey for the dressing as it is reminiscent of the bees going from wildflower to wildflower in the Spring. This salad with a nicely seasoned and grilled organic chicken breast or piece of fish would be a delicious spring meal.
Is Watermelon Healthy?

The Recipe
Ingredients
- 1 cup diced watermelon
- 1 1/2 tablespoons Bee Wild Wildflower Honey
- 1 tablespoon raspberry wine vinegar
- 1 tablespoon organic olive oil
- 1/4 teaspoon good quality sea or Himalayan salt
- 5 cups fresh picked, organic, local spring salad greens
- 1 1/4 cups sliced fresh organic strawberries
- 1/2 cup thinly sliced organic red onion
- 1/3 cup sliced organic almonds, toasted
- Freshly ground pepper
Instructions
- Blend the first five ingredients to make a smooth dressing.
- Make a bed of spring greens on a salad plate.
- Artfully arrange strawberries, red onion, and organic sliced almonds on top of the spring greens.
- Just before serving, sprinkle with 1-2 tablespoons of dressing.
- Grind fresh pepper over the salad, to taste.
