Thai Honey Peanut Chicken
We waited to celebrate #atlhoneyboy John Wright’s birthday until he came back from Costa Rica and decided to take him to a spectacular organic Thai restaurant, Siam Square, for his celebration. The food we had was spectacular, from organic Thai Basis Rolls to Green Curry. We enjoyed every bite!!!
One of the outstanding dishes we enjoyed was Thai Honey Peanut Chicken. So, I decided to dig around for a good recipe so that we could make this dish at home. After all, this recipe speaks to the versatility of honey in world cuisine. Honey is a great balancer and enhancer of flavors, and we recommend our Gallberry Honey for cooking, as it holds up well to heat.
Are Peanuts Healthy?
Unless you have a peanut allergy, peanuts are quite healthy. I found two articles that were of particular interest to our readers who are interested in creating high levels of wellness and longevity. In Harvard Health Publications, author Daniel Pendick wrote an article, “Peanuts linked to same heart, longevity benefits as more pricey nuts.” I was glad to hear this because peanuts are more affordable than some of their higher priced “cousins.” Another post from Healthy Women gives 5 reasons why you can lose weight eating peanuts. As you can see, peanuts have some impressive health benefits at a fraction of the cost of other nuts.
The Recipe
Ingredients
- 1 pound organic chicken, cut into 1" cubes
- ¼ cups organic Tamari (gluten free soy sauce)
- 2 Tablespoons Gallberry honey
- 1 Tablespoon organic lime juice
- 1 teaspoon organic minced garlic (approximately 1 Large Clove)
- 1 Heaping Tablespoon Natural peanut butter
- ½ teaspoons Curry Powder
- 1 teaspoon Asian Hot Pepper Sauce
- 1 teaspoon non-GMO organic corn starch
- 1 teaspoon good quality water
Instructions
- Mix all the ingredients and marinate the chicken in the mixture for 2-3 hours.
- Heat a large skillet or wok to medium high. Reduce the temperature to medium and cook the chicken and marinade in the skillet/wok until tender (approximately 10 minutes).
- Make a slurry of organic corn starch and the water. Reduce the temperature to medium low and simmer while stirring until the sauce thickens.
- Can be garnished with various color sesame seeds, ground peanuts, cilantro, and/or lime wedges and served with organic brown rice and cucumber/onion salad in a sweet vinaigrette.
